February 25th [International Forum on Fermentation and Soil and Global Exchange Meeting]
Ishizaka Sangyo Co., Ltd. is also engaged in international soil education activities through Ishizaka Organic Farm, which cultivates organic fixed-seed vegetables with a focus on soil quality.
Miyoshi Town in Saitama Prefecture has an agricultural culture that uses “fallen leaf compost,” a certified Japanese agricultural heritage site. Since the Edo period, the town has been deeply rooted in agriculture and food culture, preserving the rich soil and seeds nurtured by invisible microorganisms.
To learn about these historic soil conservation efforts, we will host an open international forum featuring foreign experts and leading researchers and producers of Japan’s soil and fermented food culture, to learn about and exchange soil and fermentation.
The event will also feature a global exchange event, bringing together fermented foods and beverages (sake, wine, and beer) from Saitama Prefecture. Enjoy fermented dishes and drinks while listening to explanations from leading local producers.

Experience “recycling” in a regenerated satoyama. The Sustainable Field is the only satoyama in Saitama Prefecture certified as a “place for experience opportunities.” It is a natural treasure trove, home to over 1,300 species of plants and animals.
This is a field where you can experience the comprehensive cycle of food and agriculture through tours of Ishizaka Sangyo’s resource recycling factory, tours of restored satoyama, and experiences at Naya Saryo MEGURU, where you can enjoy fermentation and locally rooted flavors, and Ishizaka Organic Farm ReDAICHI.
Mitomi Past and Present Village will open at 10:00 AM on the day of the forum. Be sure to experience the vast nature of the satoyama before the forum. You can also enjoy lunch or tea at Naya Saryo MEGURU or the on-site cafe.
